Honey Roasted Pumpkin Seeds

It's that time of year again! 
It's pumpkin seed season!! 

The time of year where I start hoarding pumpkins, asking friends if they will be using the ones they had sitting on their porch steps now that Fall is ending, and seeing if I can make them last into the new year. Last year I was still baking pumpkin seeds in January! This is not an exaggeration! I love me some pumpkin seeds, so I figured I would share my favorite recipe again, for anyone who loves them as much as I do!! 

Ingredients
Olive oil
Honey
Garlic Salt 

I am not a measurer of things, so if you need precise, then I'm really sorry. I kind of just throw in a little of this and a lot of that depending on my feelings in any particular moment. So here is a general overview of my step-by-step process... 

Step 1) Start by preheating the oven to 350 degrees. 
Step 2) Cut open pumpkin and scoop out seeds. Then place all the seeds in a bowl of semi-warm water. I let the seeds soak for a minute or two and swoosh them around the get the stringy pulp separated. The pulp should settle to the bottom and then I fish the clean seeds out and place them on a paper towel. I like my seeds to be cleaned (no thick pulp), but not too clean (still a little orange film), because I think it adds more of that pumpkin seed yumminess when finished.  
Step 3) Pat the seeds dry with a paper towel. I will usually do this twice, transferring the seeds from the first paper towel to a second in between patting (that way the seeds aren't sitting on a wet paper towel). The new paper towel will help to soak up some of the extra moisture, but I don't ever wait for the seeds to dry. Some people will tell you that's a thing (and that you must wait), but I am too impatient to have that be one of my things, so they are still moist when I stick them onto their baking sheet and this method hasn't failed me yet! I prep the baking sheet with aluminum foil and a sprinkle of olive oil (makes cleanup a cinch).
Step 4) Place the seeds in a plastic bag and pour in just a tad of olive oil, quiet a good squeeze of honey and about two shakes of garlic salt. I close the bag and get to shaking. I shake (and knead) until all the seeds are coated, check to make sure I feel they are evenly coated (if not, or I just feel in the mood for more, I will add a dash more salt and honey) and then spread them evenly onto a foil lined baking sheet. *Note: You could mix in a bowl, I just find the bag helps to spread the honey and salt evenly and makes cleanup a lot easier!
Step 5) After making sure they are evenly spread (not a lot of seeds overlapping) I will sprinkle more garlic salt on top so that the seeds have an even coating of salt. Then for good measure, I squeeze just a bit more honey to give it a good pop and then place the pan in the oven. 
Step 6) Bake for 12 minutes and then take the pan out and flip the seeds. Pop back in oven for another 12-15 minutes or until golden brown (or crisped to your preference). Babe prefers his seeds a little more crispy so sometimes I will leave them in a little longer for him. Just watch carefully, they can go from brown to burnt real quick! 
Step 7) Voila! Just let cool and enjoy!!

Sweet and Salty Honey Roasted Pumpkin Seeds

I have a love affair with pumpkin seeds! I waited as long as I could this year, but it was finally time to crack our pumpkin open and get scooping! Every year I make the same seeds. I always say I am going to try others, but I like what I like. And so this year it was another round of...
Sweet and Salty Honey Seeds! 
As if I could have done anything else right?! As a lover of all things honey, these are the perfect seeds for my soul! And they are super easy too! Just three ingredients and a little over 30 minutes between prep and bake and you have yourself a tasty snack! 

Ingredients
Olive oil
Honey
Garlic Salt

It leaves more room for me to scoop without getting overly yucky while still leaving the front nice and pretty so that I can put the lid back on and pumpkin back outside once finished. I then place all the seeds in a metal bowl of semi-warm water. I let the seeds soak for a minute or two and swoosh them around the get the stringy pulp separated. Sunday Currently: Tennessee Road Trip Edition

Linking up for another edition of The Sunday Currently...
Reading: I just finished reading The Gates of Evangeline. It was a recommendation from People magazine and when I found it at the library I had to grab it. I think I finished it in three days. I was hooked and it kept me wanting to read more and more. I hated when I had to put it down. It’s a great book, full of mystery and intrigue. A little spooky even- not scary. You find yourself connecting to the characters, even the protagonist. I also loved that I didn’t call all parts of this book. Though I did call a good portion of it I always love when some of the ending surprises me (in an good way). Any book that can throw a twist my way without outraging me is a good book in my world any day of the week!!
Writing- As of right now, just this. I did finish an article for our church magazine though that I am pretty excited to see in print. This is my second one and each time I do one I still get nervous.  
Listening- to the radio in the car. We road tripped to Tennessee this weekend for my cousins wedding.
Thinking- That I got pretty blessed to have found the perfect road trip partner! He spoils me. He packs the car early in the morning, wakes me at 5am so that all I have to do is stumble to the car and fall back asleep while he drives. Waking up to his bearded face, driving in the sunshiney morning makes me smile a lot. Even when he tells me I look a hot mess after I pull my head out from under my blanket, maybe especially when! Love is all about being open and honest right?! (P.S. I called him pretty).
Smelling- My coffee and the crisp Fall weather outside my window.
Wishing- That we could stay in Tennessee a little longer and continue to watch the leaves change colors, while spending time with family on the porch. Tennessee is my happy place and some of my very favorite people live there. Back to Florida it is though. That’s pretty happy too I guess!
Hoping- That the cooler Florida weather continues to stick around. It was so nice before we left and apparently is supposed to be even cooler when we get home!!
Wearing- T-shirt, shorts and bare feet on the dashboard, my go to road trip attire!
Loving- All the time in the car this weekend! Time in the car with just my Babe, a book or two and the tunes on the radio is total perfection to me. So two full days in the car for a one day wedding is right up my alley! 
Wanting- To be super productive this week! I worked on cleaning out the house all last weekend to prepare for a garage sale we are having on Friday. It was time to purge, A LOT! So I am hoping to go through the house again this week and get rid of at least two more boxes of stuff. Getting rid of stuff is usually really hard for me, but I have felt this need for simplicity recently so it is time for it all the just GO! 
Needing- To see my sister and my sweet nephew baby! I feel like life is so much more hectic then when all my other nieces and nephews were born. I was younger and it just seemed easier to carve out time to meet up. But life being busy doesn’t mean I can’t be more intentional about finding time to visit. Babies grow so quick and I want to cover him in kisses before he is old enough to not want as many!
Feeling- At peace. Car rides do that for me. I think it’s also the reason Flo makes me so happy. I just feel at peace on the road, there’s not much you can worry about focusing on in the car. You don’t have connection really to anything except your destination and the person sitting next to you. Glorious I tell ya!!

I’m pretty proud of them, that’s for sure! My daddy, he’s the handsome man at the end of the video, with the big heart and a story of fight and redemption.

October Currently!

Oh October! 
How I love thee! 
Especially when Florida decides to finally comprehend that October means Fall weather should arrive. Linking up with the lovely ladies of the Currently Series {Jenna & Anne} and the 5 on Friday gals to share a little of what's going on in my world for this glorious month!  
Eating } Our way through Trader Joe's delicious pizzas! Such yummy, quick and easy meals! Don't forget to add the honey! Honey and pizza is my jam! 
Exploring } All the places!! Our most recent adventure took us to Weeki Wachee where we kayaked the beautiful spring and got to meet the mermaids! 
Wearing } Long sleeves!! For the first time in a long time I was able to put them on. I am not sure if this Florida chill will last, but I am loving it! 
Admiring } My dad and the other men of Mind, Body and Soul Surf Co. for their continued work at helping those who fight addiction. I admire the steps they have taken that have brought them to the point they are at and their work at setting up their first Run 4 Recovery. You can read more about it in Wednesday's post.
Collecting } Trinkets from all of our adventures. Everywhere we go I have been collecting little mementos (shells, cure little pine cones, etc) to make into either ornaments or add to a jar that I want to get for Flo. My plan is to write on them in fine point Sharpie the name of the place we found them so that we have a little keepsake of each of the places we have been. 

And now I am off to enjoy this lovely weather that only finds it's way to Florida for 5 days each year!

Pumpkin Fun in the Classroom

Since I haven't really made this well known on here I guess it's high time you know that I put my teacher hat back on this year. No, I did not go back to teaching for the county. It would take something seriously drastic for that to happen. Instead, I am teaching preschool to 3 years old. I love it! I think God knew I needed a little bit of redemption on my faith in the classroom setting. It has been restored, tri-fold! I have the sweetest group of kiddos and I have been having fun exploring and learning with them. Where I work makes it just that much better! I love the community at Weekday School! I have no children currently, but since I am a super "think-aheader" I constantly think about homeschooling vs. classroom schooling. I still don't know what I will do about K-12, but I can tell you, without a doubt in my mind, that my children will attend school here. I have worked for WDS for over a year now and I love it more and more everyday! The Christ-centers learning, the kids, the staff, the parents, and the people... it is a place so filled with love that I could go on for days. 

Well, in honor of all things Fall and Halloweenie I thought I would share some of our pumpkin fun!!


Our Top 5 Pumpkin Fun Activities
Shape Pumpkin Puzzle 
After first reading "Spookley the Square Pumpkin" (one of my favorite Halloween stories) during circle, I introduced the kids to our classroom shape puzzle. We talked about the differences and similarities between our pumpkin and Spookley. Then I took out all of the shapes, that had been previously carved into the pumpkin. The kids each came, up found the shape I told them to find and then put it back in the correct spot. The kids were entranced and waited patiently for their turn. Once circle was over, we put the pumpkin at the science/ math table and they took turns (two kids at a time) playing/ exploring our shape pumpkin.

Candy Corn Counts
My kids loved this candy corn math activity! It helped with number recognition and 1-to-1 correspondence. I also had them count out 10 candy corns before starting. Their favorite part? Getting to eat a candy corn when it was all over! 

Scooping out Sin
Today we carved a pumpkin with a happy lil' face, 
we scooped out all his bad stuff and put light in its place. 
Ok, so we carved a jack-o-lantern. We used our week long exploration into the 5 senses to explore as we carved him. More importantly though we talked about how similar we are to the pumpkin and how, just like we scoop the yucky stuff out of the pumpkin, God sent Jesus to scoop out all our sin. We read a sweet story called "The Pumpkin Gospel." It is the perfect companion for carving a pumpkin and teaching how we can ask God to forgive us when we make mistakes and how His light can shine in our hearts for the world to see. I couldn't recommend it more! Unfortunately, upon searching for it on Amazon I have found that it is no longer being printed. If you can find this sweet book somewhere you should acquire it. Our happy lil' fellow then found his spot on my front stoop, just in time for trick-or-treaters (fingers crossed, as we had none last year). See those circles on the side of his head? Those are his ears for hearing God's word, which were used as the kids shouted our bible verse to him during our second circle time. 

Cookies
Pumpkin shaped sugar cookies!! Big ones!! With a table full of orange icing and cupcake tins filled with sprinkled and gooey eyeballs and chocolate chips galore!! Just picture it!! Mainly because I have no pictures. They (ok, who am I kidding, I made one too) were having so much fun decorating and making piles of sprinkles that I didn't think to grab a picture with my phone. I love the wonderful parents who come up with amazingly sweet snack ideas for the kids!! 

Taste Testing
I am not exactly sure how much the kids loved this one, but if you need a little comic relief in the classroom this is a good way to find it. We started with apple chips, red vs. green, and that went over pretty well. Today's taste testing? Not so much! But the faces, of the faces!! In talking about our pumpkin and using our 5 sense I gave each kid a roasted pumpkin seed to try (my favorite, coated in honey and salt). For a hot second it looked like they might like it, but then the smiles started to turn. You could tell they were trying to think it through, "do I say I don't like it or do I just try to swallow it?". I told them if they didn't like them then they could spit the seed into the bowl with the pumpkin guts. It was quite the spit contest! But oh was it humorous!
